Whole Orange & Poppy Seed Cake

1 whole orange ⠀
3 eggs ⠀
1 3/4 cup almond meal⠀
1tsp baking powder ⠀
1/2tsp bicarb soda ⠀
2tbs rice malt syrup ⠀
1/3 cup coconut oil⠀
2tbs poppy seeds ⠀

1. Preheat the oven to 160 degrees. ⠀

2. Remove the calyx (part where the Orange joined the tree) and place the whole orange in a saucepan of boiling water and simmer for 2 hours until soft. Keep topping up the water as needed. Remove the orange, roughly chop and cool in the fridge. ⠀

3. In the food processor blitz the whole orange. ⠀

4. Add all the remaining ingredients except the poppy seeds and blitz to combine. Stir through the poppy seeds. ⠀

5. Pour batter into a lined 20cm cake tin and bake for 45-55 minutes until cooked through - you can use a skewer to check. ⠀
