125g pasta⠀⠀
20g butter ⠀⠀
1 small zucchini, grated ⠀⠀
1 small clove garlic, grated ⠀⠀
125g smooth ricotta ⠀⠀
40g cheese, grated ⠀⠀
⠀⠀
1. Cook the pasta according to the packet instructions and reserve 1 cup of the cooking water for the pasta sauce. ⠀⠀

2. Melt the butter in a frying pan and add the zucchini and garlic and cook on a medium heat for 5 minutes. ⠀⠀
⠀⠀
3. Reduce the heat to low and add the ricotta, the grated cheese and the cooking water a little bit at a time (you might not need all of it) to form the sauce. ⠀⠀

4. Add the pasta and stir together. Serve immediately. ⠀⠀
