1 x 400g can chickpeas, rinsed and drained⠀⠀
½ cup peanut butter (we love Mayvers)⠀⠀
3 dates, pitted ⠀⠀
1 tsp vanilla extract⠀⠀
1 tsp baking powder⠀⠀
½ cup sultanas⠀⠀
½ cup rolled oats⠀⠀

1. Preheat the oven to 180 degrees and line a baking tray with baking paper or a silicone mat. ⠀⠀

2. Combine the chickpeas, peanut butter, dates and vanilla in the food processor until smooth. ⠀⠀
⠀⠀
3. Stir through the baking powder, sultanas and oats. ⠀⠀
⠀⠀
*If you’d like a cookie with less texture you can combine all the ingredients in the food processor. ⠀⠀

4. Roll tablespoons of the mixture and place on the baking tray and flatten slightly. ⠀⠀
⠀⠀
5. Bake for 10-15 minutes until they are just beginning to brown on the edges. The cookies will firm up as they cool. ⠀⠀
